Having the opportunity to photograph the process of making Cetenija is quite a challenging and yet rewarding task for any food photographer. Cetenija is a traditional Bosnian dessert which is forgotten by many nowadays. It is said that it takes 12 skillful hands to create this traditional treat. The ingredients are few and common, but the making process is demanding and uncommon. A dozen hands need to work in unison to make a wool-like paste by pulling the fragile sugar dough through roasted flour. This can go on for hours, so those that tire are replaced by others. The making of Cetenija is more than food preparation, it is social gathering. While some pull the dough, others enjoy coffee and singing traditional songs. Finally, after long hours everybody enjoys the treat, which tastes like starchy candy floss. It is served in small pieces on small plates.
